The 2021 Cabernet Sauvignon (Coombsville) offers up an exotic mélange of dark-fleshed fruit with the cooling savory notes that are so typical of the appellation. Sage, lavender, mint, spice and leather open with some coaxing. The Coombsville Cabernet is the most refined offering in this range, although it has plenty of textural intensity.

Fayard has a real penchant for crafting stylish wines, and it shows here in this Coombsville-sourced Cab, with its polished tannins and ripe, glossy blackberry fruit, which finds footing atop that Coombsville spicy dried herb character and cool-climate freshness. With plenty of grip and tension, hints of mocha and cherry pie spices weave their way around the nose and palate.

Expectations run high for a top-of-the-line Cabernet in a great vintage like 2021, and this wine meets them—and then some. Seriously deep in color and flavor but not overblown in any respect, this is a beauty rather than a mere bruiser. Fancy new oak shows in the bouquet, but lovely fruit scents are even more prominent, and the same holds true on the palate, with rich flavors of blackberries and dark cherries driving the flavors through the long, symmetrical finish.

Production Notes
Arriving in small picking lugs from the vineyards, the clusters were hand sorted, de-stemmed and hand sorted again, berry-by-berry. A two-day cold soak was followed by primary fermentation in small, open-top stainless steel tanks. Following an extended maceration, the fruit was gently pressed and the wine moved to barrel for secondary fermentation. The wine was aged for 19 months in rare 100% New French Artisan Oak barrels with minimal racking. Multiple, blending trials, determined the final blend, which was bottled unfined and unfiltered.
